Making Air Fryer Zucchini Chips is an easy, healthy way to use up your garden zucchini! Lightly seasoned, crispy and simple.

Growing up, we had a big garden and a LOT of zucchinis. So much that my Dad had a hard time giving it all away! As a kid, I didn’t love zucchini unless it was made into crispy fried zucchini chips, like these Air Fryer Zucchini Chips.

As a kid, my Dad would thin slice zucchini, throw them in the deep fryer and fry them to perfection. This made for super crisp zucchini chips, but they were also very greasy.

I tried to bake these zucchini chips in the oven, but they just didn’t get crispy enough! So, I moved on to the air fryer.

These Air Fryer Zucchini Chips are a much lighter version of fried zucchini chips! The hardest part is cutting the zucchini. After that, all of the work is left to your trusty air fryer.

I kept the seasoning light on this. The vinegar is optional, but I really like the bite that it adds!

Zucchini Chip Seasoning Options

The seasoning for these homemade zucchini chips can be adjusted, but I do love the simple combination of garlic powder and seasoned salt. It’s perfect!

But if you’d like to experiment, here are some other ideas for seasoning your Air Fryer Zucchini Chips:

  • ranch dressing seasoning/ dressing mix 
  • sea salt, black pepper and fresh rosemary
  • your favorite barbecue rub 
  • onion powder and fresh green onion
  • smoked paprika and oregano
  • Parmesan cheese

I’ve tried all of these, so rest assured they make for delicious flavors!

I highly recommend using a mandolin slicer to cut your zucchini so that your slices are as even and thin.  If you are able to adjust the thickness settings, set it as small as you can. If you don’t have a mandolin slicer, that’s fine!

Take your time with your chef knife and do your best to slice the zucchini into thin, even slices. 

Just a few more tips before we get on to the recipe! For crispy zucchini chips, you’ll want to remove as much moisture as possible.

Also, for maximum crispiness, you’ll need to make sure the chips are placed in a single layer. This will allow the air in the air fryer to circulate around the zucchini to crisp it up. If you have a smaller air fryer, you may need to make several batches.

Serving Suggestions

These Air Fryer Zucchini chips make a great side dish, or an appetizer.

They’re great with your favorite dips! Try these chips with ranch, hummus or dill dip, or as the dipper for this zesty Cajun Crab Dip! Anything you’d use potato chips for; these are a great substitution!

Storing Leftover Air Fryer Zucchini Chips

I doubt that you have any of these air fried zucchini chips leftover, but if you do, your leftover chips can store in an airtight container on your counter for about a week.

Air Fryer Zucchini Chips

You will need about 2.5 medium zucchini.

Ingredients
 

  • 3 cups zucchini, sliced thin*
  • nonstick oil spray
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons seasoned salt
  • 1 teaspoon garlic powder

Instructions
 

  • 1. Using a mandoline slicer or chef knife, slice the zucchini rounds into thin, uniform slices. Line a plate with layers of paper towels and place the zucchini on top. Pat the top with paper towels to remove as much excess moisture as possible.
  • 2. Place zucchini in a large bowl. Add vinegar and toss to combine.
  • 3. Spray air fryer basket with non-stick cooking spray.
  • 4. Add zucchini chips into air fryer basket, allowing for slight overlap. This will help keep the slices from flying around the air fryer.
  • 5. Air fry at 370 degrees F for 4-5 minutes. Flip the chips over and fry for an additional 4-5 minutes, until they reach desired crispness. If the chips are not turning golden brown, spray them lightly with the cooking spray to help them crisp up. Keep a close eye on the zucchini chips and remove as soon as they start turning golden-brown.
  • 6. Once done frying, sprinkle with seasoned salt and garlic powder.
  • 7. Enjoy!

Notes

I recommend checking on your zucchini chips and shaking the basket around the 3 and 6 minute mark.
Each model of air fryer is different, so you'll want to be sure that your chips aren't burning! If you start to see signs of burning on the edges of the zucchini chips, they're done! Stop the cooking process and remove the chips.
